Spring into Summer Fresh & Cured Meats CSA

 

Mark your calendars! Our next round of offerings in the 2012 Underground Meats CSAs begins April  26th!

All of our CSA offerings run for three months, but you can always just grab one or two months. Each month's package contains around 4-5lbs of tasty meats prepared by the crew at Underground Meats. This spring we plan to offer a mix of fresh / prepared products like pork, veal, and other yummy sausages, fresh cuts, pork liver pate, bacon, and other items. We'll also throw in some of our classic cured products, including peperonesoppressatasaucisson sec as well as items we make only for our subscribers. It's pretty fantastic. We Say Goodbye to Zoe Van Orsdol

Zoe played a number of important roles, from managing the catering company to helping us open Kitchen. She was always one of the most stable, confident and kind people we had working with us. What we loved about Zoe is that her confidence in what we were doing gave everyone else confidence in what we did and the goals that we were trying to achieve as a company. Zoe offered insight and advice that made our lives easier and helped improve both our service and food. Her experience was something that we relied on day in and day out. Many of us knew Zoe for years before she started working for us and many of us became friends with her through work. This is a belated goodbye as Zoe left us back in February -  we all miss her dearly. Hope Mississippi's awesome.

Toast Bar at Bradbury's Coffee Friday Jan. 27th

Underground Food Collective will be popping up this Friday (Jan. 27th) at Bradbury's Coffee starting at 7pm.  We will be serving  six different varieties of  toast with wine pairings until 9:30pm. No tickets or reservations, just show up and order and eat. We will have vegetarian and meat options. Sorry, no gluten free.

Where :: 127 N. Hamilton (Bradbury's Coffee)

Time :: 7pm to 9:30pm

Cost :: $7 for toast. Wine pairings are additional.

 

We Say Goodbye to Amelia Pisapia

It seems that it is the time of year when our friends decide to pick up and move on from Madison. And there's no doubt about it that we're losing one of our most beloved. Amelia is heading to Italy and then to New York. Amelia started working for us in the summer of 2010 and left quite a mark on our organization. When the restaurant opened we instantly realized what an amazing server she was. We quickly started to heap more and more responsibility and she never complained and continued to excel through the madness that opening a first restaurant could be. She brought a sense of calm to a sometimes hectic first few months. As we got to know her better we realized what a smart and caring person we had hired.

We Say Goodbye to Heather Allen

We hired Heather Allen to help us organize our businesses. We realized we could no longer operate as a group of friends who casually catered some weddings and hosted some events. Someone was needed to tackle some of the more difficult parts of expansion - our meat processing company and our restaurant, Underground Kitchen- as well increase client communication through our catering company.

4th of July Fresh Sausage CSA

This extra special CSA is a one time only deal. People will receive three fresh sausages, perfect for the grill this weekend: Weiswurst, Hot Dogs, and Texas Hot Links.

Details:

- Quantity: ~4lbs

- Price: $30. Pay with cash or check upon pick up

- Pickup is Saturday, July 2nd between 9am and 1pm at the Underground Kitchen 127 E. Mifflin St.

- Space is limited to just 30 people
