We Say Goodbye to Zoe Van Orsdol

Zoe played a number of important roles, from managing the catering company to helping us open Kitchen. She was always one of the most stable, confident and kind people we had working with us. What we loved about Zoe is that her confidence in what we were doing gave everyone else confidence in what we did and the goals that we were trying to achieve as a company. Zoe offered insight and advice that made our lives easier and helped improve both our service and food. Her experience was something that we relied on day in and day out. Many of us knew Zoe for years before she started working for us and many of us became friends with her through work. This is a belated goodbye as Zoe left us back in February -  we all miss her dearly. Hope Mississippi's awesome.

This Week's Video: pig face

We served the meat from pig's head in a soup during our February trip to NYC. This is how we prepared it -

Forequarter

We are happy to announce that we are opening a new restaurant at 708 1/4 E. Johnson. This is a project that has been in the works for over one year and we are very excited to be located in the Tenney-Lapham neighborhood. UFC has its roots there and many of the members live here. The restaurant will be very small (33 total seats) and cater to the neighborhood. Forequarter will in no way be a replacement for Kitchen. We are currently hoping to open by late autumn 2012.

This Week's Video: tapping maple syrup with Joey Dunscombe

This week's video is a bit of a production, but tapping maple syrup with Joey Dunscombe was also just that awesome.
